The double cream was 2 days out of date (but still smelled just fine) so I used it - perhaps that caused it. Your tip to whisk it up with electric beaters was just the ticket - it turned out marvellous. (I don't have glucose but I put in a drop of glycerine, too - don't know how much effect that had overall.)
